This recipe has been around one side of the family for a while. They used it to add calories to someone when they didn’t feel like eating solids. We have taken it and made it our own. There are no exact measurements for the recipe. The only thing that is a must is only add enough liquid to barely cover the potatoes. Everything else is take it or leave it. We have found that on days you cook bacon it is best to always make the whole package. If there is left overs then just freeze them and you can cut them up and add to recipes like stroganoff or this soup to make it taste so much better.

Potato Soup

Ingredients

  • Potatoes
  • Chicken Stock
  • Curry
  • Parsley
  • Butter
  • cheese
  • sour cream
  • milk or cream

Instructions

  • Peel potatoes and cut. Add water/chicken stock to pan until it just covers the potatoes. Add parsley, curry and bullion to. Boil until cooked. Mash potatoes. Do not drain water. Add milk butter sour cream and cheese until desired consistency. Add salt and pepper to taste
    Top with more cheese and bacon if you want
