This recipe is a family favorite. Breakfast is always delicious when we make this. I generally add 3 apples instead of 2.

German Apple Pancake

Ingredients

  • 4 eggs lightly beaten
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp vanilla extract
  • 4 tbsp butter
  • 3 large apples peeled, cored and thinly sliced
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 pinch salt
  • 1/3 cup packed light brown sugar
  • confectioner sugar

Instructions

  • In a large mixing bowl, combine the beaten eggs, milk, flour and vanilla and whisk until just blended. Set the batter aside for at least 20 minutes
  • Preheat over to 450
  • in an ovenproof 12 inch skilled, melt butter over high heat. Add the apples, cinnamon, nutmeg and salt. Cook while stirring constantly until the apples are soft and lightly golden around the edges.
  • Add the brown sugar and cook until apples are caramelized and very soft.
  • Working very quickly pour batter over the apples and place in oven for 15 minutes
  • The pancake will puff up around the edges and look like it will overflow. That is fine
  • Remove and serve with confection sugar on the top
