We debated long and hard about what makes a good chili and what exactly it should have in it. Should it have tomatoes, ground beef, or BEANS?! All the debate ended when we found Alton Browns recipe for pressure cooker chili. We have since add pinto beans to the recipe at the very end after it is all cooked. We usually serve it with rice and cheese. Looking back I won the bean battle but lost the tomato and kind of meat battle. I feel sad about this for only about 2 seconds. Once I taste this chili I remember that I don’t care what I used to think made a perfect chili. This recipe is the new gold standard of Chili recipes.
This the recipe. We do it in the instant pot. It does taste better if you brown the meat first. Also we add a can of pinto beans at the very end before we serve it.
